Coffee comes from places far away from our shores. Ethiopia is the birthplace of coffee and has a proud and strong tradition for roasting, brewing and enjoying coffee in a beautifully ceremonial way. Coffee has since travelled the world and is being prepared and enjoyed in many different ways. In recent years the Scandinavian countries have become destinations for culinary travellers, including those looking for coffee!

Robert William
Robert William Thoresen is a pioneer on the new Scandinavian coffee scene. Since winning the first World Barista Championship in 2000, he has travelled every corner of the coffee-producing world in search for the most ambitious farmers. Each season, he selects the best lots for us and roasts small batches of these precious beans at KAFFA in Oslo exclusively for SCH.

Seasonality in coffee is one of the intriguing features of this wonderful product that suits our Scandinavian spirit so well. We love all seasons of the year and we enjoy what each of them has to offer.

Coffeebeans

Each coffee lot that is offered at SCH is sourced at origin by Robert William and bought directly from the farmers who grew it. Coffee is grown at different times of the year depending on country and climate. That is why we work hard not only to give to you the most awesome coffees available, but to bring them to you at the right time after they are harvested at source. The freshly roasted coffee from KAFFA is available at SCH only for a limited time, but we will replace your favourite coffee with another as soon as it runs out. So what`s in season now?

The freshest coffees on the market this time of the year are from Colombia. Robert has recently been to Huila to carefully select micro lots from small holders in the southern part of this important coffee growing region. These guys are the greatest, most eager farmers on the hill, making super clean, crisp and fruity coffee, always with the unmistakable chocolaty flavour and smooth mouth feel. Juicy and bold. Buen provecho!

Making a great cup of coffee beverage is not very difficult. You just have to do it right. Using good ingredients, head and hands, and a dash of love, it will result in something great. We like to think of it as a craft.

Scandinavians have always travelled, so our culinary traditions are influenced by many others. Otherwise we would not have had coffee in the first place. We have embraced the coffee culture to such an extent that we have created our own - one that suits our palate and temper. At SCH we have designed a coffee program that shows our deep rooted traditions for coffee preparation. At the same time we are re-interpreting the presentation of it, dressed for a new era in coffee.

In short, at KAFFA the coffee beans are roasted to a degree that let them express fruity sweetness and    clarity, just like the mature coffee cherry was when picked off the tree. Only the finest and best selected beans can stand this test. Secondly, we brew each drink individually, to bring out the fullest flavour of the roasted beans, as well as making a nice gesture.

It is a clash of cultures and it is all good. Traditionally we serve the coffee as it is, black and beautiful. Yet the tradition of blending coffee with sugar and milk is as long as the tradition of drinking coffee itself. Thus we pride ourselves in making it part of our tradition too, whether it is serving awesomely textured milk for a classic Italian cappuccino, pouring a traditional coffee with cream or blending an iced coffee with honey. Sweet!

Next to the coffee beans' quality and roast it's up to our baristas to determine whether or not this coffee will be treated well or badly. What flavors should we extract out of the freshly ground coffee and how many components? In addition to a fresh and proper grinding of the coffee, it is the barista`s job to use the tools to optimize the coffee beans available. The amount of coffee, the grinding grade, quality and amount of water, water temperature and the contact time between water and coffee. Will all combine to get the perfect cup of coffee. The mixture of it all determines the end result.

LA MARZOCCO

Made by hand in accordance with the fine Italian tradition, La Marzocco`s espresso machines are unique in several ways; double stainless steel tanks and water-filled groups designed to achieve the most stable extraction temperature, besides a large steam capacity. All set for getting the best out of our espresso beans. The "High base" version makes it possible to use large pitchers and cups; the stainless steel steam pipes with their unique construction ensures long and trouble free life. 

Since 1927, La Marzocco has developed and manufactured espresso machines for the most demanding baristas around the world. Throughout this period the company has concentrated on developing machines of the highest quality, both in terms of reliability and most importantly the quality of what we will serve our guests. La Marzocco has won many awards over the years and was a key player in the creation of the later so famous World Barista Art. 

Stable temperature is one of the most important prerequisites for achieving the perfect espresso. In addition to the fact that La Marzocco brewing groups are the heaviest in the industry, they are welded together with the water tank. As a result the correct water circulates all the way to the brew group. This combined with its massive construction optimizes the temperature, and the result is a consistently perfect espresso. An average western coffee shop will use the steam function up to 400% more than in Italy. This high demand can in traditional espresso machines causes the pressure and temperature of the water tank to vary, which in turn leads to a reduced quality espresso. La Marzocco`s double tank system separates water from the steam and tea functions. Thus provides baristas with an almost unlimited steam capacity, without the optimal brewing temperature for espresso affected! La Marzocco always use the latest available technology; microprocessors for all programming ensure precise shots, time after time. Backup functions minimize the down time needed for service.

Perfectly extracted coffee will appear robust, with no bitter substances. To achieve this we depend on several factors from the grinder:
- Temperature during grinding
- How the beans are ground
- How accurately can the grind level can be set
- The quality and lifespan of the blades
